A life spent NOT in the kitchen...

I know some people love to be in the kitchen, cooking away. I am not one of them. Spending hours in a kitchen to make a meal you'll enjoy for a half hour just doesn't appeal to me. Maybe my opinion is also based on the fact that I can't cook... and that is no exaggeration. Baking? I love to bake and I'm great at it but I think it's because you follow what the recipe says. When it comes to adding the spices and such, I am lost. Anywho, back to the fact that spending hours in the kitchen sucks.

Enter: crockpot

I LOVE my crockpot! I think it's wonderful to be able to dump everything into it the the morning then have a cooked meal 6-8 hours later. So today I've decided to share my favorite crockpot recipe (found here)

Crock Pot Chicken Taco Chili

Servings: 10 Size: 1 1/4 cups Old Points: 3 pts Points+: 5 pts
Calories: 203.7 • Fat: 1.4 gCarb: 33.3 g • Fiber: 10.0 g Protein: 16.9 g
  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).


Now I did not add the onion, corn, chili peppers (this includes in the tomatoes), and cumin. I added a little onion powder for just a little flavor but I left out the others because I'm not not a fan of super spicy. Oh, and the corn since corn should be eaten by itself. Here is what mine looks like when done:


Beau and I highly recommend this recipe. Perfect for a fall - or winter - night! Bon appetit!!!

  3. oh yum! i love my crock pot, but honestly after driving an hour home from work, sometimes i just want to eat and sit on my bum! :) crock pots are awesome!

  5. crock pots are awesome! AND soup season has begun, there are plenty of soups recipes for crock pot cooking as well!! Thanks for sharing this recipe, I'll have to try it soon!
